Gramma Polyglutamic acid biopolymer (hereinafter called as γ-PGA (Picture 1)) uses the main material as glutamic acid, nitrogen, and organic carbon and mineral and thanks to bacterial fermentation, forming polymer, this substance enhances the ability of nutrient absorption. Due to its special chemical structure, the γ-PGA molecule has strong hydrophilic property, high adhesion property, absorption property of metal and many other functions. Furthermore, γ-PGA is a non-toxic and biodecom-position substance, for that reason, γ-PGA can widely be applied in many fields such as food, cosmetics, health food, medicine and pharmaceuticals, agricultural production and environment treatment. γ-PGA was first found in a kind of Japanese food – called as natto ( a product of soybean fermentation) in which the substance in the form of adhesive can be drawn into fibre, of which γ-PGA holds for more than 55%, the remaining of 40% is Levan.
