BANGIMAX Lactic Acid Buffered (LA60/SL20) (BGIMAX100)is a solution of L(+) Lactic Acid buffered with Sodium Lactate ,produced by fermentation. Lactic Acid and Sodium Lactate are registered in Europe as food additives with the references E270 and E325.
One of the main uses of BANGIMAX Lactic Acid Buffered is for the preparation of transparent sweets (high boiled sweets). It is used for acidification of hard boiled candies while preventing sugar inversion and the resulting stickiness and opacity of the sweet.
Furthermore, Lactic Acid is preferred to citric acid in products containing calcium as gelling agent; Lactic Acid can also be used in strong acidic sweets because it limits sugar inversion----when compared to malic and citric acid i.e.-and resulting hygroscopycity and stickness.
